Meal Prep for the week

Ok so I was super duper busy this weekend and had a VERY limited amount of time to prepare meals SOOOO I had to pick things that were quick and easy.  I decided to make a big salad, tuna salad, turkey meatloaf, chicken fajitas, and why not make my husband a meatloaf too while I'm at it!!

 

Here is what I started with!


I began with what would take the longest to cook.. the fajatas because I was putting them in the crock pot for sake of saving me cooking time. I purchased chicken tenders dumped them in the crock pot, sliced up my peppers and added seaoning.. BAM chicken fajitas done (in 4 hours haha)

Then I chopped an onion and tossed it in a pan with a few sprays of EVOO to cook for the meatloaves.

 

I began prepping the salad at this point. Took the 2 bags of precut lettuce (i was on a serious time crunch and this saves time soooo there ya have it) dumped the bags into my salad bin for the fridge and preceeded to chop up all my peppers and celery into chunks. I used a chopper for this which is seriously a LIFE SAVER!! Once that was complete I popped all that stuff on top of my lettuce and sprinkled it with blue cheese and BINGO salad done. (I was also mixing the onion around that whole time to get it nice and sauteed)

 

There was celery left over so I chopped some of it up small for tuna salad and cut the rest into longer slices for dipping in peanut butter. The only other thing I added to the tupperware for the tuna salad was chopped carrot (which was already done from the soup I made last week. No wasting in this house!!) I don't like to prepare tuna salad too far in advance because it can become watery and gross. I will add a can of tuna a bit of FF Mayo and some mustard and seasoning to it the night before I want to have it for lunch.

Ok meatloaf time. I took half a pound of ground turkey, some of the sauteed onion I just prepared, some seasoning, a couple squirts of ketchup, and about a quarter cup of bread crumbs (maybe a little less) mixed it together and formed 4 mini meatloaves. For my husbands meatloaf (that's right he gets his own because he doesn't like turkey) I bought a meatloaf mix of meat which is beef and pork. I took that mix added an egg, bread crumbs, ketchup, seasoning, and the rest of the onion and BAM meatloaf done. I put all of this in the oven at the same time on 350. My mini meatloaves were done in about 30 min and husbad's meatloaf probably about an hour.

Minus cooking time for the fajitas and meatloaf I was done with everything and the kitchen was cleaned and dishes done in 45 mintues. It's all about good planning and good time managment!!
